As the author of this book and a person who has spent years behind bars, I witnessed firsthand the low priority given to the quality of food we were served. There has never been a better time to get educated about what goes into our food. Nutritionists and scientists are increasingly finding a correlation between our diet and the state of our health. The more processed the food we eat, the more likely it is to decrease our life expectancy. This is particularly concerning for the incarcerated, who have no choice but to consume those horrible diets.
